- Preheat the oven to 325°F (163°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the rolled oats, mixed nuts, shredded coconut, sunflower seeds, and ground coffee.
- In a separate small bowl, whisk together the melted coconut oil, honey or maple syrup, vanilla extract, and salt.
- Pour the wet mixture over the dry ingredients and stir well until everything is evenly coated.
- Spread the mixture onto the prepared baking sheet in an even layer.
- Bake in the preheated oven for 20-25 minutes, or until the granola turns golden brown, stirring halfway through.
- Remove from the oven and let it cool completely on the baking sheet.
- Once cooled, transfer the coffee granola to an airtight container for storage.
- Serve with milk or yogurt for a delicious breakfast or enjoy it as a snack.
Notes
Feel free to customize your granola by adding dried fruits or chocolate chips after it has cooled down. Store in a cool, dry place for up to two weeks.
