Ingredients
  

  • 2 cups rolled oats
  • 1 cup mixed nuts (e.g., almonds, pecans)
  • 1/2 cup shredded coconut
  • 1/4 cup cup sunflower seeds
  • 2 tbsp ground coffee
  • 1/4 cup coconut oil, melted
  • 1/4 cup honey or maple syrup
  • 1 tbsp vanilla extract
  • Pinch of salt

Method
 

  1. Preheat the oven to 325°F (163°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the rolled oats, mixed nuts, shredded coconut, sunflower seeds, and ground coffee.
  3. In a separate small bowl, whisk together the melted coconut oil, honey or maple syrup, vanilla extract, and salt.
  4. Pour the wet mixture over the dry ingredients and stir well until everything is evenly coated.
  5. Spread the mixture onto the prepared baking sheet in an even layer.
  6. Bake in the preheated oven for 20-25 minutes, or until the granola turns golden brown, stirring halfway through.
  7. Remove from the oven and let it cool completely on the baking sheet.
  8. Once cooled, transfer the coffee granola to an airtight container for storage.
  9. Serve with milk or yogurt for a delicious breakfast or enjoy it as a snack.

Notes

Feel free to customize your granola by adding dried fruits or chocolate chips after it has cooled down. Store in a cool, dry place for up to two weeks.
